The Valente organic farm is located in Tuscany, in the province of Grosseto, inside the Regional Park of the Maremma, which is also known as Natural Park of Uccellina in the towns of Talamone and Fonteblanda, in the municipal territory of Orbetello.
Our extra virgin olive oil, is made exclusively with our own certified organic olives, which are grown following the principles of biodynamic agriculture. We use the typical local varieties of olives, such as Frantoio, Leccino and Moraiolo.
The Olives are harvested from October on, and each batch is cold pressed the day of harvest. The oil is obtained exclusively from the pressing of fresh olives, after having been cleaned from leaves and sprigs and centrifuged.
Our oil is extra virgin, as it is obtained only from the first cold pressing using a mechanical process.
The high quality of the oil is due to the low percentage of oleic acid, which does not exceed 0,2 %, and the amount of polyphenols, which is 400 mg / kg.
The regulated limits are a maximum of 0,6% of oleic acids and a minimum of 60 mg / kg of polyphenols.
